Our values - food

As Quakers we respect the world around us. We do all we can to minimise our impact on the environment. This includes decisions about the food we buy, and who we buy from.

  • We use fresh produce, supplied daily. We seek out small, local suppliers to help us meet our needs.
  • We always look for fairly traded and organic options.
  • We buy produce in season and source from UK farmers. We are committed to animal welfare and buy free range meat and dairy produce wherever possible.
  • We encourage healthy eating in our menus and we always provide a good range of vegetarian and vegan options.
  • We know that people coming to our restaurant and café have a wide range of dietary requirements. We do all we can to meet these. 

Activities to support our values 2008–2012

We take practical steps to put our values into practice.

We will:

  • Use only free range eggs in all our food by the end of 2009 and work to gain a Good Egg Award
  • Work to gain Vegetarian Society accreditation by the end of 2009
  • Use only those suppliers who provide sustainable fish stocks by the end of 2008 – and promote dishes featuring under-used species on our menus
  • Run a wellness campaign in 2009 as part of our commitment to healthier eating
  • Recycle all of our food waste by the end of 2009
  • Comply with Compassion in World Farming standards for the majority of our meat by the end of 2010
  • Use only UK grown fresh produce by the end of 2010
  • Increase our use of organic produce by 35% by the end of 2011
  • Seek out suppliers working to minimise harmful packaging by the end of 2011
  • To move ahead with our commitment to reduce carbon emissions, source at least 40% of our ingredients from within Greater London by the end of 2012
