Vegan Double Chocolate Chip Cookies

Our colleagues at Bake The Difference have given us this recipe for their vegan double chocolate chip cookies, a perfect afternoon sweet treat.

The Bake the Difference programme is run in partnership with London Pathways Partnership (LPP). The programme aims to provide training and support to people who have a diagnosis of personality disorder and have a history of offending or antisocial behaviour. It aims to help the people on the programme integrate into society. Through this programme, those involved learn practical and theoretical cooking and baking skills.

 

Bake The Difference Cookies Ingredients:

  • 150g Castor sugar
  • 150g Soft brown sugar
  • 170g Vegan margarine
  • 1 1/2 tsp Baking powder
  • 85g Cocoa powder
  • 190g Plain flour
  • 1 1/2 tbsp Almond milk or other dairy free milk
  • 170g Dark vegan chocolate drops

 

Bake The Difference Cookies Method:

  1. Heat the oven to 180°C/ gas mark 4 and line a tray with a
    reusable baking sheet.
  2. Put both the white and brown sugar in a bowl with the
    margarine and cream together with an electric whisk until
    light and fluffy.
  3. Sift the baking powder, cocoa powder and flour together
    until the margarine mixture.
  4.  Add the milk and mix by hand until combined.
  5. Add 3/4 of your chocolate chunks and disperse evenly
    through the mix.
  6.  Roll into balls and flatten with your finger tips adding the
    remaining chocolate chunks on top.
  7. Bake in the center of the oven for 10 minutes (note they will
    be very soft but firm up when you take them out of the
    oven).
